When we were still in the making, we instinctively turned to bourbon as the ideal pairing to our cuisine.
At the time, spirits and cocktails were not considered gastronomic material, and American whiskey was largely undiscovered in our part of the world. Still, this direction made perfect sense to us: a new world bar, inspired by our new world kitchen and the birthplace of low & slow barbecue.
To us, an Old Fashioned is a way to present the true character of its base spirit.
We use house sugars and bitters to craft a distinct Old Fashioned expression for each whiskey in our collection. We take the same approach with our non-alcoholic cocktails, created to be an uncompromising experience for guests who prefer them.
Every cocktail is made to be part of the gastronomy on your table – that’s why what started as a selection of eight bourbons is now an alchemy exercise in bitters and fermentation.
