Anyone in the culinary world knows that cooks and pastry chefs are two very different breeds - the former go by feel, treating their work as a skilled craft; the latter favour precision, finding art within the science of their trade.
Elena’s first steps in the kitchen were driven by an endless love for sweets. She felt her natural direction was pastry, immersing herself in creating desserts that broke the mold.
It didn’t take her long to realize there was no real divide between cooking and pastry. Precision, paired with a desire to juxtapose textures, aromas and flavours that contradict as much as they complement each other, has become the hallmark of her cooking - across both food and dessert.
Elena studied architecture before turning to gastronomy, and her design instincts carried straight into the kitchen, shaping a culinary sensibility that is as technically precise as it is deeply intuitive.
Early in her career, she elevated bar food into considered gastronomy at Kokkini Svoura. In 2017, she founded Lick the Spoon, her private pastry workshop producing bespoke celebration desserts with seasonal ingredients.
In 2019 she founded Fine Mess, the culmination of years of search and experimentation, and home to her personal expression on food and hospitality.
